          <datacite:description xml:lang="ja" descriptionType="Abstract">アルドースイソメラーゼは希少糖生産上有用であるため近年注目を集めているが、希少糖生産に向けて適切に酵素活性を測定するのは困難である。そのため、希少糖生産に必要な酵素量を正確に算出することができず、酵素の過不足が生じやすい。本稿では、ADA法がD‐フルクトース存在化ではほとんど呈色しないが、アルドースは鋭敏に検出・定量できるという報告をもとに、本法のアルドースイソメラーゼ活性測定への応用を試みた。結果として、ADA法はケトース存在下でもアルドースを定量することができ、従来法では難しかったケトースからアルドース方向への酵素活性の正確な評価を可能とした。アルドースイソメラーゼの酵素活性をADA法により評価することで、希少糖生産時の酵素添加量をより精密に制御できるようになるだろう。</datacite:description>
          <datacite:description xml:lang="en" descriptionType="Abstract">Aldose isomerases are beneficial enzyme for rare sugar production and their demands have increasing because some rare sugars are recently focused as functional material. On the Izumoring, a strategy of rare sugar production, aldose isomerases are used to produce aldose from ketose. Generally, aldose isomerase activity is evaluated using cysteine‐carbazole method by measuring producibility of ketose from aldose. However, this method is not appropriate method for evaluation of rare sugar producibility because it evaluates reverse reaction of production for many rare sugars. In this study, the authors found that the colorimetric method, o‐amino diphenyl‐acetic acid method (ADA method), is suitable evaluation method of aldose isomerases activity for rare sugar production. ADA method showed two digits higher detection sensitivity for aldoses such as D‐glucose, D‐mannose, and D‐allose, compared with ketoses such as D‐fructose and D‐allulose. Actually, L‐rhamnose isomerase activity was evaluated using ADA method, resulting enzyme activities which is theoretically correct were obtained. This ADA method will be appropriate method for evaluation of aldose isomerase activity for rare sugar production.</datacite:description>
