| 内容記述 | Though the standardization of fruit and vegetable is the most essential factor for the rationalization of the distribution process of them, there has been little works dealing with the enforcement method of standardization from the social and economic points of view. In the present study, the results of the questionnaire to wholesalers and retailers on the estimation of quality for the fruits (namely, peach, pear, grapes and apple), were reported. (1) For the standard estimation of quality, the importance was placed on the internal quality more than the external one. (2) Making a great point on the internal quality showed tendency to increase year after year. (3) The tint was the most important quality within the external quality. (4) The internal quality, especially flavor, was related more closely to the bland above the external quality. | |||||||||||

| 内容記述 | 青果物流通の合理化をはかる上で, 規格の標準化が極めて重要であるにもかかわらず, 社会経済的観点から標準化の実施方法を論じた研究は皆無に近い状態にある. そこで本研究では、青果物規格の標準化をはかる上での検討資料を得るため, 仲卸業者と小売業者を対象に, 果実(モモ, ナシ, ブドウ, リンゴ)の品質評価方法についてアンケート調査を実施, 検討し, 次のような結果を得た. (1)品質評価基準としては, 外観的品質よりも内容的品質が重視されている. (2)内容的品質を重視する傾向は年々強くなってきている. (3) 外観的品質評価基準としては, 「色合い」が最も重視されている. (4)内容的品質, とくに味は, 外観的品質に比べて銘柄と高い相関にある. | |||||||||||
