| 内容記述 | Sugar alcohols are use in food products, yet their metabolic effects in humans are poorly known. In this study, blood glucose response after the ingestion of 50 g maltitol, or mixture of 25 g maltitol and 25 g sucrose was examined in healthy young subjects. Fifty‐one non‐obese volunteers were studied after an overnight fast. After the ingestion of maltitol or mixture of maltitol and sucrose, the rise in blood glucose was less than after the ingestion of glucose. With the glycemic index of glucose as 100,the indexes of sucrose, maltitol and mixture of maltitol and sucrose were 60.2, 26.2 and 46.2, respectively. The glycemic response to mixture of sucorose and maltitol was a middle value between these of maltitol and sucrose. These results suggest that maltitol cause small changes than does glucose or sucrose in blood glucose concentration and that maltitol does not inhibit a‐glucosidase, sucrase or maltase, in small intestine. The small glycemic response suggest also that maltitol is suitable component of the diet for diabetic patients. | |||||||||||

| 内容記述 | 糖アルコールは様々な食品に使用されているが、ヒトにおける糖アルコールの代謝については不明な点も多い。本研究では、50gのマルチトールあるいは25gマルチトールと25gショ糖混合物の血糖上昇反応を若年健常者を対象に検討した。51人の被験者を一晩絶食させた。ショ糖、マルチトールおよびマルチトール・ショ糖混合物を摂取した後の血糖上昇反応は、いずれもブドウ糖摂取後のそれに比べて小さかった。ブドウ糖を100として算出したショ糖、マルチトールおよびマルチトール・ショ糖混合物のグリセミック・インデックスは、それぞれ60.2、26.2および46.2であった。マルチトール・ショ糖混合物の血糖上昇反応は、マルチトールおよびショ糖血糖上昇反応のほぼ中間値であった。これらの結果から、マルチトールはショ糖やブドウ糖に比べて低い血糖上昇をもたらすこと、またマルチトールはスクラーゼやマルターゼなどのα－グルコシダーゼ活性を阻害しないことが示唆された。マルチトールは糖尿病患者の食材として適していると考えられる。 | |||||||||||
