| 内容記述 | In Japan, cakes which are decorated with strawberry fruits are popular for consumers. Then, many strawberry fruits are utilized by pastry shops in a year around. Hence, to make clear characteristics of strawberry fruit quality which were preferred by patisseries in pastry shops, the questionnaire survey of strawberry fruit was conducted to 32 patisseries in pastry shops. The questions were about sweetness, acidity, hardness, size, aroma, color, taste, cultivar, price and needs. From the results of the present survey, it made clear that many patisseries seemed to be satisfied with the sweetness, acidity, and hardness but not aroma. In addition, many patisseries thought that the strawberry fruits were necessary to conduct the management of pastry shop. | |||||||||||

| 内容記述 | 日本では，イチゴの果実を利用したケーキは消費者に対して人気が高い．そのため，洋菓子店は，年間を通して多くのイチゴ果実を利用している．そこで，菓子店のパティシエによって好まれるイチゴ果実における品質の特徴を明らかにするため，32の洋菓子店のパティシエに対してイチゴ果実に関するアンケート調査を行った．質問は，甘味，酸味，硬さ，大きさ，香り，色，味，品種，価格とニーズについてだった．今回調査の結果から，多くのパティシエは甘さ，酸味，硬さについては現状で満足しているものの，香りについては満足していないように思われた．また，多くのパティシエはイチゴの果実が洋菓子店の経営にとって必要であると考えていた． | |||||||||||
