Then, many strawberry fruits are utilized by pastry shops in a year around. Hence, to make clear characteristics of strawberry fruit quality which were preferred by patisseries in pastry shops, the questionnaire survey of strawberry fruit was conducted to 32 patisseries in pastry shops. The questions were about sweetness, acidity, hardness, size, aroma, color, taste, cultivar, price and needs. From the results of the present survey, it made clear that many patisseries seemed to be satisfied with the sweetness, acidity, and hardness but not aroma.
